After gentle pressing, the base wines are fermented in temperature-controlled conditions to maintain purity of fruit, then assembled into a carefully balanced cuvée. The secondary fermentation takes place in bottle (traditional method is standard for premium Brut Nature styles), followed by aging on the lees to add texture, fine mousse, and subtle complexity before disgorgement without dosage, in keeping with the Brut Nature profile and organic philosophy.
