Vollereaux Champagne Rosé de Saignée Brut is a seductive, characterful rosé Champagne that showcases the precision and flair of the Vollereaux family. Crafted entirely from Pinot Noir and made using the traditional saignée method, it delivers both vivid colour and real depth of flavour. This non-vintage cuvée highlights the estate’s long-standing expertise in Champagne, offering a refined yet generous style that stands out in a crowded category.

Tasting Notes
In the glass, this Champagne shows a radiant, deep salmon-pink hue with fine, persistent bubbles that form a delicate mousse. The nose opens with inviting aromas of wild strawberries, ripe raspberries and redcurrants, layered with hints of rose petals and a discreet touch of pastry and spice. On the palate, Rosé de Saignée Brut is full-flavoured and beautifully balanced, combining ripe red berry fruit with a subtle spicy undertone and a refreshing, citrus-tinged lift. The 9 g/L of residual sugar is perfectly judged, giving a rounded, creamy feel without sacrificing freshness. The mousse is silky and persistent, enhancing the wine’s generous texture and length. Enjoy it now for its vibrant fruit and charm; with a few years of bottle age it will develop more savoury, patisserie and dried-fruit nuances while retaining its finesse.

Production
This Champagne is sourced from carefully selected Pinot Noir parcels in the chalk and limestone-rich vineyards of Champagne, where cool climates and mineral soils preserve acidity and aromatic precision. Grapes are harvested by hand at optimal ripeness to protect the fruit and allow for strict bunch selection. The rosé de saignée method involves a short maceration of the clear juice with the dark Pinot Noir skins, extracting colour, flavour and gentle tannin before the juice is drawn off to ferment. After the first fermentation in temperature-controlled conditions, the wine undergoes secondary fermentation in bottle and is matured on its lees to build complexity, fine bubbles and texture, before disgorgement and a Brut dosage of around 9 g/L.

Food & Serving
Vollereaux Rosé de Saignée Brut is a versatile partner at the table, excellent as an elegant aperitif yet structured enough to pair with food. It complements dishes such as gravlax or lightly smoked salmon, tuna tartare, sushi and sashimi, as well as shellfish like prawns, lobster and scallops. It also works beautifully with poultry, charcuterie, and soft, creamy cheeses. Serve well chilled at around 8–10 °C; a brief, gentle aeration in the glass is usually sufficient, so decanting is not necessary, but pouring into tulip-shaped Champagne glasses will best showcase its aromas and fine mousse.
