Tasting Notes
In the glass, the 2022 vintage shows a luminous, translucent ruby color with a delicate, youthful rim—classic cool-climate Pinot Noir. Swirl the glass and you’ll notice clarity and brightness, hinting at the wine’s freshness and precision. On the nose, expect lifted aromas of wild strawberries, red cherries, and cranberry, layered with subtle notes of rose petals, crushed chalk, and a touch of spice—white pepper and a hint of clove. There’s an underlying minerality that feels very much of Champagne’s chalky soils, giving a sense of tension and energy. The palate is refined and focused rather than opulent. Juicy red berry fruit—think raspberry and red currant—meets taut acidity and fine, silky tannins. The mid-palate is vibrant and linear, with a subtle savory edge and a chalky, saline finish that lingers. Oak, if used, is discreet and well-integrated, supporting the fruit rather than dominating it. This 2022 has the structure and freshness to evolve nicely over the next 5–7 years, gaining a bit more complexity and softness in the tannins. In its youth, it’s all about purity and precision; with a little bottle age, expect more sous-bois, spice, and tertiary nuances to emerge.

Production
This Coteaux Champenois Rouge comes from vineyards in the Champagne region, where Pinot Noir is rooted in the area’s famed chalk and limestone-rich soils. The cool northern climate, combined with excellent drainage from the chalk substrata, produces grapes with high natural acidity, delicate aromatics, and a strong sense of place. Yields are typically kept low to intensify flavor and concentration. Grapes are carefully hand-harvested at optimal ripeness—slightly riper than for sparkling wine—to ensure sufficient depth and texture for a still red. In the cellar, Vincent Cuillier favors a gentle, minimalist approach: careful sorting, partial or full destemming depending on the vintage, and a controlled fermentation to preserve aromatics and finesse. Maceration is kept moderate to avoid excessive extraction, emphasizing silk over power. Aging takes place in tank and/or neutral barrels (often older oak) to round the wine without masking its crisp fruit and mineral backbone. The result is a precise, terroir-driven Pinot Noir with clear Champagne fingerprints.

Food & Serving
This refined Pinot Noir is a versatile partner at the table, shining with delicately flavored dishes. Pair it with roast chicken, duck breast, rabbit, or veal, as well as charcuterie, terrines, and pâté. It also works beautifully with mushroom risotto, beetroot dishes, grilled salmon or tuna, and soft cheeses like Brie, Chaource, or Tomme-style cheeses. Serve at 14–16°C (57–61°F) to highlight its aromatics and freshness without muting the subtle complexity. A light decant of 20–30 minutes can help the wine open up, especially in its youth, revealing more floral and mineral nuances. Use a Burgundy-style glass to emphasize texture and aromatic lift.
