Postup provides sun-drenched, stony, coastal parcels with poor, rocky soils that give intensely ripe, concentrated fruit, while the slightly fresher, elevated sites of Prizdrina contribute lift, aromatic nuance, and balance. The vineyards are farmed according to organic principles, with careful hand work in the vines and manual harvesting to ensure only perfectly healthy, ripe bunches are selected. In the cellar, Plavac Mali is vinified with a focus on preserving clarity and purity of fruit: gentle extraction, controlled fermentation, and thoughtful maturation (often in a combination of neutral vessels and/or older wood) allow the natural character of the grape and terroir to shine without excessive oak influence.
