Tasting Notes
In the glass, Cuvée Rubis shows a luminous salmon-pink hue with fine, persistent bubbles that form a delicate mousse. The nose opens with pure red berry notes—wild strawberry, raspberry, and redcurrant—layered with blood orange, rose petals, and a touch of spice. Subtle hints of brioche, crushed chalk, and dried herbs emerge with air, adding complexity and elegance.
On the palate, the Champagne is dry, vibrant, and finely structured, with a core of juicy red fruits framed by a precise, chalky minerality. Flavors of ripe strawberries, morello cherry, citrus zest, and a hint of pomegranate are underpinned by a refined creaminess from extended lees aging. The finish is long, fresh, and mouthwatering, with a subtle saline edge and a gentle touch of savory spice. While beautifully accessible on release, this non-vintage rosé can evolve gracefully for 3–6 years in a good cellar, gaining more brioche, nutty nuances, and additional textural richness.
Production
Sourced from Vilmart’s own premier cru vineyards in the Montagne de Reims, primarily around Rilly-la-Montagne, Cuvée Rubis reflects a cool, chalk-rich terroir that naturally delivers tension and finesse. The blend is largely Pinot Noir, which provides structure and red-fruited intensity, supported by a smaller proportion of Chardonnay that adds lift and precision. Grapes are harvested by hand to ensure meticulous selection of bunches at optimal ripeness. True to Vilmart’s house style, the base wines are vinified and aged in oak (typically large foudres or barrels), adding texture, subtle spice, and complexity without overshadowing the fruit. The wine then undergoes secondary fermentation in bottle and rests extensively on its lees before disgorgement, with a carefully judged dosage to balance vibrancy and harmony.
Food & Serving
Cuvée Rubis is an exceptionally versatile rosé Champagne at the table. It pairs beautifully with tuna tartare, salmon sashimi, grilled prawns, and seared scallops, as well as charcuterie, roast chicken with herbs, and lightly spiced Asian dishes. It also works wonderfully alongside soft cheeses and berry-based desserts that are not overly sweet. Serve well chilled at around 8–10°C (46–50°F) to highlight its freshness and aromatic detail. A brief 10–15 minutes in the glass, or a short, gentle decant in a chilled carafe, can help the wine open up and reveal its full bouquet and textural depth.
