Tasting Notes

On the palate, the wine is dry, linear, and finely textured, with a balanced freshness that makes every sip feel clean and precise. Production
The grapes come from vineyards in the heart of Collio, in Capriva del Friuli, where south-facing slopes and marl-rich soils create ideal conditions for Ripolla Gialla to ripen while retaining freshness. Harvest is carried out by hand in September during the coolest morning hours, followed by gentle whole-cluster pressing, destemming, a few days of cold maceration, and fermentation in temperature-controlled tanks. The wine is then matured on fine lees for several months to build harmony and depth.

This wine pairs beautifully with seafood, shellfish, light fish dishes, risottos, fresh salads, and delicate vegetable-based starters. Serve it well chilled at around 8-10°C; decanting is not necessary, as its appeal lies in its fresh, immediate expression.
