Villa Degli Olmi Quattro Passi Appassimento Rosso Veneto is a rich, warming red from Veneto that showcases the generous, plush style of appassimento winemaking. Made from Merlot and Corvina, it offers concentrated fruit, a velvety texture, and a subtly sweet impression that makes it both approachable and memorable.

Tasting Notes
In the glass, it shows a deep ruby-red colour. The nose is expressive and inviting, with aromas of blackcurrant, plum, raisins, and blueberry, layered with vanilla, chocolate, and sweet spice notes of cinnamon and clove. The palate is full-bodied and creamy, with jammy dark fruit, soft tannins, and gentle acidity that keeps the wine balanced. The finish is long and warmly spiced, with a lingering sweet-fruited character. While already very enjoyable now, it should hold well for a few years if stored properly.

Production
This wine comes from Veneto, where the appassimento method is used to partially dry the grapes before vinification, concentrating flavour, colour, and texture. The blend of Merlot and Corvina brings together ripe fruit, softness, and regional character, resulting in a wine with depth, warmth, and a smooth, velvety profile.

Serve at 16–18°C and consider decanting for 20–30 minutes if you want to open up the aromatics. It pairs beautifully with grilled meats, braised dishes, rich pasta recipes, and mature cheeses.
