Tasting Notes
In the glass, it shows a warm amber-gold color with a polished, mature sheen. The nose opens with baked apple, dried pear, vanilla, toasted wood, and subtle spice, followed by hints of caramel and nuts.
On the palate, it is round and balanced, with ripe apple character layered over notes of cinnamon, almond, citrus peel, and gentle oak. The finish is long, elegant, and warming, with enough structure and concentration to continue developing gracefully over time, although it is already beautifully integrated at this age.
Production
Produced in the Calvados region of Normandy, this spirit is rooted in an area renowned for its fertile apple orchards and traditional cider-making culture. The apples are typically harvested at optimum ripeness, then fermented into cider before distillation and long aging in oak casks, which softens the spirit and adds depth, spice, and texture. The 10-year maturation gives this bottling its refined character and layered complexity.
Food & Serving
Best enjoyed neat as a contemplative digestif, or alongside apple tart, tarte Tatin, crème brûlée, or aged cheeses such as Comté or Pont-l'Évêque. Serve slightly below room temperature, around 16–18°C, to let the aromatics open fully. Decanting is generally not necessary, but allowing the spirit a few minutes in the glass can enhance its bouquet.
