Tasting Notes
In the glass, this Crémant shows a pale straw color with glints of green and a fine, persistent mousse. On the nose, it opens with fresh citrus—think lemon zest and grapefruit—alongside green apple, white flowers, and subtle notes of almond and chalky minerality.
The palate is very dry and linear, true to its Brut Nature classification. Lively acidity frames flavors of crisp apple, lemon peel, and a touch of white peach, supported by delicate brioche and nutty nuances from time spent on the lees. Chardonnay brings finesse and freshness, Pinot Noir (Pinot Nero) adds structure and subtle red-fruit depth, while Gamay contributes a juicy, lifted fruitiness. The finish is long, clean, and saline, making it an excellent choice for those who enjoy a taut, precise style of sparkling wine. Best enjoyed within a few years of purchase, though it has enough structure to age gracefully for 3–5 years, gaining a bit more creaminess and toast over time.
Production
Sourced from selected vineyard sites across Burgundy, this Crémant draws on cool-climate terroirs with limestone- and clay-rich soils that naturally favor high acidity and aromatic finesse. The grapes—Chardonnay, Gamay, and Pinot Noir—are harvested relatively early by hand or carefully machine-harvested to preserve freshness and fruit purity. Vinification follows the traditional method used in Champagne: a first fermentation in stainless steel to maintain clarity of fruit, followed by a second fermentation in the bottle. The wine then rests on its lees for an extended period to build texture, complexity, and fine bubbles. As a Brut Nature, no dosage is added at disgorgement, allowing the terroir, grape blend, and natural acidity to take center stage.
Food & Serving
This ultra-dry Crémant is a natural match for oysters, shellfish, and simple seafood dishes—think prawns, scallop crudo, or steamed mussels. It also pairs beautifully with sushi, fresh goat cheese, lightly fried tempura, or delicate vegetable starters. Serve well chilled at around 6–8°C (43–46°F) to highlight its precision and freshness. Decanting is not necessary, but opening the bottle a few minutes before serving and pouring into proper sparkling wine flutes or white wine glasses will help the aromas unfold.
