Tasting Notes
In the glass, the 2018 Ulysses Cabernet shows a deep, opaque ruby to garnet hue, with a dense, almost inky core that hints at its concentration and aging potential. The nose opens slowly yet confidently: ripe blackcurrant and black cherry interwoven with cedar wood, clayey earth, bay leaf, and subtle floral tones. As it evolves in the glass, more complex aromas of mocha, licorice, tobacco leaf and warm spice emerge.
On the palate, it is medium to full-bodied and beautifully composed, with tightly knit yet polished tannins that feel velvety rather than aggressive. Flavors of cassis, dark cherry and plum are layered with espresso, cocoa, graphite and savory herb, all carried by a fine line of acidity that brings freshness and lift. Production
Crafted from Cabernet Sauvignon grown in carefully selected vineyard parcels, Ulysses 2018 reflects a terroir of warm days, cool nights and well-drained soils that naturally limit yields and concentrate flavor. Grapes are harvested by hand at optimal ripeness, sorted with meticulous care to ensure only pristine fruit makes it into the final blend. Fermentation takes place in temperature-controlled vessels to preserve aromatic purity, followed by extended maceration to extract fine tannins and depth of color. The wine is then aged in high-quality oak barrels, a judicious portion of which are new, lending subtle notes of cedar, mocha and spice without overshadowing the fruit. Finally, it is bottled in imperial format to encourage slow, graceful maturation.
Food & Serving
This 2018 Cabernet Sauvignon is a natural partner for richly flavored dishes such as dry-aged ribeye, roast lamb with rosemary, braised short ribs, venison, or truffle-infused mushroom dishes. It also works beautifully with aged hard cheeses like Comté, Parmigiano Reggiano or mature cheddar. Serve at 16–18°C (60–64°F) to showcase its full aromatic range. Given its youth and structure—especially in a 6L bottle—decanting for 2–3 hours is recommended for current drinking, with even longer decanting for those who prefer a more open, expressive profile.
