Tasting Notes
In the glass, the 2012 Ulysses Cabernet Sauvignon is an intense, opaque purple with a vibrant rim, hinting at both concentration and youth. The nose opens with layered aromas of crème de cassis and ripe blackcurrant, interwoven with cedar, graphite, licorice, and a subtle dark floral note. Hints of tobacco leaf and fine pencil shavings add a distinctly Bordeaux-inspired complexity.
On the palate, the wine is full-bodied, rich, and firmly structured, with a core of pure black fruit wrapped in finely knit tannins. Flavors of cassis, blackberry, and dark plum are supported by nuances of cedar, cocoa, and savory spice, leading to a long, persistent finish marked by mineral-tinged graphite and subtle licorice. Production
Ulysses Cabernet Sauvignon 2012 comes from a meticulously farmed estate vineyard situated on well-drained, gravelly and alluvial soils that naturally limit yields and concentrate flavor. The vines are carefully tended throughout the growing season, with hand-harvesting at optimal ripeness to preserve freshness and phenolic balance. In the cellar, the grapes are sorted with great precision before fermentation, allowing only pristine fruit to proceed. Vinification focuses on gentle extraction to capture structure without harshness, followed by extended aging in carefully selected French oak barrels to polish the tannins and integrate the wine’s intense fruit, oak, and savory elements into a seamless whole.
Food & Serving
This is a serious, age-worthy Cabernet that shines alongside equally refined dishes. Pair it with dry-aged ribeye, grilled lamb chops with rosemary, slow-braised short ribs, venison, or rich dishes like beef Wellington; on the cheese board, choose hard, mature varieties such as aged Comté, Parmigiano-Reggiano, or a well-aged cheddar. Serve at 16–18°C (60–64°F) to showcase its aromatics and structure. In its youth, decant for 1.5–2 hours to allow the wine to open up; as it matures and softens in bottle, a shorter decant of around 30–45 minutes will usually suffice.
