Description
Ulysse Collin Les Roises is a benchmark Blanc de Blancs that captures the depth and precision for which this estate has become so admired. Made from Chardonnay and aged extensively on the lees, it combines old-vine concentration with a refined Extra-Brut profile, offering a Champagne of impressive complexity and character.
Tasting Notes
In the glass, it shows a poised, luminous presence, with a fine mousse and a layered, subtly golden tone that hints at its time on lees. The nose opens with orange oil, ripe peach, warm spices, beeswax, and white flowers, creating a rich and expressive aromatic profile.
On the palate, it is full-bodied, seamless, and deeply layered, with a muscular core balanced by freshness and precision. The texture is expansive and multidimensional, and the wine’s concentration suggests excellent aging potential, with the ability to gain even more nuance over time.
Production
Les Roises comes from old Chardonnay vines overlooking the village of Congy in Champagne, a site known for producing wines of notable depth and intensity. The long lees aging of 48 months before disgorgement adds complexity and textural richness, while the Extra-Brut style preserves the purity and structure of the fruit. The production focuses on expressing the vineyard’s natural concentration and the distinct character of mature vines.
Food & Serving
This Champagne is well suited to refined dishes such as scallops, lobster, roast chicken with cream sauces, or poultry with mushrooms, as well as aged hard cheeses. Serve chilled at around 8–10°C to best show its aromatic detail and layered texture, and decanting is generally unnecessary, though a short period in the glass can help it open up further.
Producer
Ulysse Collin has built a strong reputation as one of Champagne’s most compelling grower-producers, particularly for expressive wines that highlight site identity and precision. The estate is widely respected for its meticulous work in the vineyards and cellar, and has earned recognition among sommeliers and collectors for producing some of the region’s most distinctive Blanc de Blancs and Pinot Noir bottlings.
