Tasting Notes
The 2025 vintage is pale salmon in colour, highlighted by delicate copper and silver reflections. Its expressive nose reveals white peach, citrus, grapefruit and wild strawberries, layered with white flowers, Mediterranean herbs and a subtle touch of white pepper. Dry, fresh and precise on the palate, the wine has a silky texture supported by bright acidity and attractive minerality. Flavours of red berries and gentle spice carry through to a long, elegant finish. It is best enjoyed for its youthful freshness and aromatic precision, although its structure should allow it to develop gracefully over the short term.

Production
The blend comprises 30% Cinsault, 30% Grenache, 30% Syrah and 10% Rolle. The grapes are harvested during the cool morning hours to preserve freshness and aromatic intensity, then gently pressed. Fermentation takes place in temperature-controlled stainless-steel tanks at 16–18°C, followed by a short period of ageing on the fine lees before the final blending. This careful approach gives the wine both freshness and body, while maintaining impressive aromatic clarity.

Food & Serving
A versatile food rosé, Ultimate Provence pairs beautifully with grilled fish, shellfish, ceviche, sushi, fresh salads, Mediterranean dishes, light poultry and summer barbecue fare. It is equally enjoyable as an elegant aperitif or a relaxed terrace wine. Serve well chilled at around 8–10°C; decanting is not necessary.
