Tasting Notes
In the glass, the 2022 Zottorinotto shows a luminous straw-yellow color with greenish highlights, signaling its freshness and youthful energy. The nose opens with lifted aromas of citrus zest, lemon blossom, wild herbs, and green apple, layered with notes of crushed stone, sea spray, and a subtle hint of fennel and white peach that becomes more pronounced with air. On the palate, this Etna Bianco is taut, vibrant, and linear, driven by a racy acidity and pronounced volcanic minerality. In the cellar, Tornatore employs a gentle, modern approach: soft pressing, cool temperature fermentation in stainless steel to protect delicate aromatics, and a period of maturation on fine lees to add subtle texture and complexity without overshadowing the wine’s mineral core. The result is a precise, terroir-driven Etna Bianco that speaks clearly of its volcanic origin.

Tornatore Etna Bianco Zottorinotto 2022 is a natural partner for seafood and Mediterranean cuisine. It shines with crudo, oysters, grilled prawns, and simply prepared white fish, but also pairs beautifully with octopus salad, seafood risotto, linguine alle vongole, and fresh goat’s or sheep’s milk cheeses.
