Description
Thymiopoulos Vineyards Rosé de Xinomavro 2022 is not your typical pale, poolside rosé. Crafted from the characterful Xinomavro grape in northern Greece’s Macedonia region, it offers a deep, gastronomic style that bridges the gap between serious rosé and fine light reds. Spontaneously fermented, unfiltered and un-fined, this is a thoughtful, terroir-driven wine for those who enjoy discovery in their glass.
Tasting Notes
In the glass, the Rosé de Xinomavro shows an intense salmon-pink hue with coppery highlights, more reminiscent of an old Cognac than the delicate, watery pink tones of many Provençal rosés. The nose is striking and expressive: notes of red peach, wild strawberries and sun-ripened tomato are layered with dried mountain herbs and a gentle sweetness reminiscent of chamomile tea.
On the palate, the wine is dry yet textural, with a fine-grained, gentle tannin frame that gives structure and grip. The time in oak adds depth and a subtle creamy roundness, bringing to mind salted caramel and roasted stone fruit, while the natural acidity of Xinomavro keeps everything fresh and mouth-watering. Complex, elegant and quietly powerful, it drinks beautifully now but has the concentration and structure to evolve over the next 2–3 years, gaining even more savoury and herbal nuance.
Production
Sourced from the sun-drenched slopes of Macedonia in northern Greece, this rosé reflects the rocky, well-drained soils and Mediterranean climate tempered by cool mountain influences. Grapes are carefully harvested by hand to preserve freshness and purity, then spontaneously fermented with indigenous yeasts. The wine is left unfiltered and unfined to maintain texture and character, and it matures for a minimum of four months in oak barrels, which builds complexity, enhances the natural extract of Xinomavro and lends that distinctive, subtle caramel and spice backdrop.
Food & Serving
This is a food-loving rosé that shines with Mediterranean-inspired dishes: think grilled octopus, slow-roasted tomatoes with herbs, charred peppers, lamb kofta, or vegetable-rich Ottolenghi-style mezze. It also works beautifully with stuffed peppers, baked feta, roast chicken with lemon and thyme, or dishes featuring aubergine, cumin and smoked paprika. Serve at around 10–12 °C; slightly cooler for apéritif drinking, a touch warmer at the table to let its savoury layers unfold. A brief decant of 15–20 minutes in a carafe can help the aromatics open up, especially if served closer to cellar temperature.
