In the cellar, the fruit is gently destemmed and fermented with careful temperature control to retain aromatic freshness, often using indigenous yeasts to highlight the vineyard’s character. Maceration on the skins provides color and fine tannins, followed by maturation in neutral vessels (such as large old oak or concrete) to polish structure without overwhelming the wine’s distinctive, mineral‑driven profile.
