The vineyard is planted predominantly to old-vine Merlot with a smaller proportion of Cabernet Franc, farmed at very low yields to concentrate flavor. Harvesting is done entirely by hand, with meticulous sorting to retain only perfectly mature berries. In 2021, Mitjaville deliberately maintained his chai at a relatively warm 17°C year-round, encouraging a more evolved, textural style that pushes the vintage’s natural character to its full expression. Fermentations are long and gentle, favoring whole berries and careful extraction, after which the wine is aged in barriques (a high proportion new), where it develops its hallmark notes of dark fruit, espresso and exotic spice. The result is a wine that is both unmistakably right-bank Bordeaux and unmistakably Tertre Roteboeuf.
