Tasting Notes
Pale straw in the glass, this wine is expected to show a luminous, refined appearance with a cool, mountain-like freshness. The nose typically leans toward citrus blossom, lemon zest, green apple, white peach, and a subtle smoky, flinty edge from the volcanic soils.
On the palate, Carricante from Calderara Sottana is known for its vibrant acidity, saline mineral drive, and taut, linear structure. Flavors of citrus, orchard fruit, herbs, and wet stone usually unfold with impressive clarity, finishing long and energetic. Production
This wine comes from Calderara Sottana, one of the most distinctive crus on Mount Etna, where volcanic soils rich in stones and ash lend the wine its signature mineral intensity. The high-altitude vineyards benefit from strong diurnal shifts, helping Carricante retain freshness and aromatic precision. Harvest is typically carried out by hand, and vinification is designed to preserve purity, site expression, and the grape’s naturally bright acidity.

This Etna Bianco pairs beautifully with shellfish, grilled fish, oysters, seafood pasta, and Mediterranean vegetable dishes. It also works well with soft cheeses and lightly spiced cuisine. Serve chilled at around 10–12°C, and decanting is generally not necessary, though a short aeration can help if the wine is tasted very young.
