Teo Costa Piemonte DOC Bianco Passito 2021 is a refined Italian dessert wine that marries local character with modern flair. Crafted from Arneis and Chardonnay grapes using the traditional passito (dried grape) method, it delivers intense flavor in an elegant, balanced style. Part of the innovative Vitidautunno® range, it celebrates the colors and richness of autumn in Piemonte, both in the glass and in its distinctive amphora-shaped bottle.

Tasting Notes
In the glass, this Bianco Passito typically shows a deep straw to golden hue, with luminous reflections that hint at its concentration and sweetness. The nose is expressive and layered, offering aromas of dried apricot, candied citrus peel, acacia honey, white flowers, and hints of baked apple, supported by delicate notes of almond and vanilla. On the palate, expect a luscious, velvety sweetness that is kept in check by fresh, Piemonte-derived acidity. Flavors of ripe stone fruit, citrus marmalade, honeycomb, and dried tropical fruit unfold gradually, with subtle nutty and pastry-like undertones from the passito process. The finish is long and persistent, with a clean, lifted edge that prevents the wine from ever feeling heavy. Properly cellared, the 2021 vintage has the potential to develop additional complexity over the next 8–10 years, gaining notes of caramel, nougat, and dried fruit while retaining its core freshness.

Production
Sourced from hillside vineyards in Piemonte, this Bianco Passito benefits from sloping exposures, well-drained soils, and a climate that allows grapes to reach full ripeness while preserving acidity. Select bunches of Arneis and Chardonnay are harvested by hand and then dried (in the traditional passito style) to concentrate sugars, flavors, and aromas before pressing. The must is fermented slowly at controlled temperatures to protect the delicate aromatics, and the wine is then matured—typically in stainless steel and/or neutral vessels—to harmonize sweetness and freshness while keeping the fruit expression pure. The result is a dessert wine that feels both traditional in method and contemporary in its precision and polish.

Food & Serving
This Piemonte DOC Bianco Passito is a versatile dessert partner, ideal with fruit tarts, lemon or almond cakes, panna cotta, crème brûlée, or a simple plate of butter cookies and biscotti. It also works beautifully with blue cheeses, aged hard cheeses, and foie gras, where its sweetness and acidity create a luxurious contrast. Serve lightly chilled at around 10–12°C (50–54°F) in small white wine or dessert wine glasses. Decanting is generally not necessary, but opening the bottle 15–20 minutes before serving allows the aromas to fully bloom.

The Teo Costa winery is a long-standing family estate that has been cultivating the rolling hills around the picturesque village of Castellinaldo in Piemonte for well over a century. Today, Roberto Costa plays a leading role in the region as president of the Arneis growers within the association “I Vignaioli di Castellinaldo,” advocating for the quality and recognition of this historic area.
