Tenute Orestiadi Pacenzia Zibibbo Vendemmia Tardiva is a refined Sicilian dessert wine crafted from late‑harvested Zibibbo grapes. Concentrated by the island’s sun and time itself, it delivers a luscious, aromatic profile that remains beautifully balanced and elegant. Named after the Sicilian concept of “Pacènzia” – the art of patient waiting – this wine celebrates the slow maturation of grapes that capture the very soul of the Mediterranean.
Tasting Notes
In the glass, Pacenzia Zibibbo shows a radiant golden hue, often with amber reflections that hint at its richness and concentration. The nose is intensely perfumed, with lifted aromas of candied citrus peel, orange blossom, honey, and dried apricot, wrapped in notes of ripe tropical fruit and a suggestion of spice.
On the palate, it is unctuous yet poised, offering layers of honey, candied lemon and orange, ripe peach, and dried figs, supported by a vibrant acidity that keeps the sweetness from feeling heavy. The finish is long, enveloping, and slightly saline, echoing citrus zest and mature fruit. With proper cellaring, this late harvest Zibibbo has very good aging potential over the next 8–12 years, gradually developing more dried fruit, caramel, and nutty nuances while retaining its core freshness.
Production
The grapes for Pacenzia are sourced from sun‑drenched vineyards in western Sicily, where Mediterranean breezes, mineral‑rich soils, and stark diurnal temperature shifts help Zibibbo develop both aromatic intensity and natural acidity. The fruit is left to hang on the vine for a late harvest, allowing sugars and flavors to concentrate under the warm Sicilian sun. Hand harvesting ensures only the ripest, healthiest bunches are selected. After gentle pressing, fermentation proceeds slowly at controlled temperatures to preserve the grape’s floral and citrus character. The wine is then matured to harmonize its sweetness, texture, and aromatic complexity, resulting in a dessert wine that is both opulent and finely tuned.
Food & Serving
Pacenzia Zibibbo is an exceptional partner for Sicilian pastries such as cannoli, cassata, and almond cookies, as well as fruit‑based desserts featuring apricot, peach, or citrus. It also pairs beautifully with blue cheeses, aged hard cheeses, and foie gras, where its sweetness contrasts salt and richness. Serve slightly chilled at around 10–12°C (50–54°F) to highlight its aromatics and balance. Decanting is generally not necessary, but opening the bottle 10–15 minutes before serving allows the bouquet to fully emerge.
