Tasting Notes
In the glass, it typically shows a deep ruby colour with bright garnet reflections, hinting at its balance of freshness and structure. The nose opens with dark cherry, ripe plum, dried red berries, and subtle notes of sweet spice, cocoa, and a touch of dried herbs.
On the palate, this wine is medium to full-bodied, smooth, and layered, with juicy red and black fruit framed by soft tannins and lively acidity. The Ripasso technique lends extra texture, a hint of savoury depth, and a more persistent finish than a standard Valpolicella. It can be enjoyed now for its generous fruit and balance, but it should also hold well over the next few years.
Production
Produced in Veneto’s Valpolicella Classica area, this wine draws on vineyards suited to the region’s long winemaking tradition, where well-exposed hillside sites and limestone-rich soils help preserve freshness and aromatic clarity. The grapes are harvested at optimal ripeness, then the wine is traditionally re-fermented or macerated with the skins left over from Amarone production, a method that adds body, colour, and complexity before maturation.
Food & Serving
This is an excellent match for roasted meats, grilled lamb, pork loin, mushroom risotto, and aged cheeses, as well as hearty pasta dishes with rich tomato or meat sauces. Serve it at around 16–18°C, and if possible, decant for 20–30 minutes to let the aromatics open and the texture soften.
