Tenuta Paolo Scavino Barolo Ravera 2021 is a refined expression of Nebbiolo from one of Novello’s most distinguished crus. The wine combines the power and structure associated with Barolo with the precision, aromatic lift and mineral character of the Ravera vineyard. Founded in 1921, Paolo Scavino is one of the historic family estates of the Langhe, renowned for producing terroir-driven wines with both tradition and modern clarity.
Tasting Notes
The wine has a luminous garnet-red colour with evolving brick-red highlights. Its bouquet is characteristically Nebbiolo: fragrant red cherries and raspberries mingle with rose petals, violet, liquorice, spice and subtle earthy nuances. With air, the aromas gain depth, revealing hints of tobacco and well-integrated oak.
On the palate, Barolo Ravera is elegant yet firmly structured, with concentrated red fruit, savoury spice and a pronounced mineral impression. Fresh acidity provides energy, while the fine-grained tannins promise excellent development in bottle. The 2021 vintage offers both immediate aromatic appeal and the structure required for long-term ageing—ideally for 10–20 years or more under suitable cellar conditions.
Production
Ravera is a highly regarded cru in the commune of Novello, known for its elevation, exposure and mineral-rich soils, which help produce Nebbiolo with freshness, perfume and depth. Paolo Scavino farms its vineyards with the aim of allowing the character of each site to emerge, combining careful vineyard work with modern winemaking techniques. The grapes are traditionally fermented with extended maceration to extract colour, fragrance and tannin, followed by maturation in wood to develop complexity while preserving the wine’s natural energy and individual sense of place.
Food & Serving
This Barolo is an excellent partner for richly flavoured dishes such as braised beef, game, slow-cooked lamb and veal in a robust sauce. It also pairs beautifully with truffle-based pasta, porcini mushrooms, aged hard cheeses and the classic Piedmontese dish brasato al Barolo. Serve at 18–20°C. Decanting for approximately one to two hours is recommended when enjoying the wine young; older bottles should be handled gently and decanted only if necessary to remove sediment.
Producer
Tenuta Paolo Scavino was established in 1921 in Castiglione Falletto and remains a family-owned reference point in the Barolo region. Today, Enrico Scavino works alongside his daughters Enrica and Elisa, continuing a philosophy built on independence, precision and respect for vineyard character. The family owns approximately 29 hectares and cultivates a further selection of historic Barolo vineyards across Castiglione Falletto, Barolo, La Morra, Novello, Serralunga d’Alba, Verduno and Roddi. With more than six decades of experience behind its viticultural approach, the estate is particularly respected for its complex, powerful and elegant cru Barolo wines.
