Tasting Notes
The wine displays a deep garnet colour, characteristic of mature Nebbiolo. Its aromatic profile is defined by remarkable clarity and concentration, with layers of red berries, rose petals and violet complemented by delicate spice, liquorice and earthy undertones. On the palate, Carobric is powerful yet finely balanced, with vibrant acidity, firm but polished tannins and a long, persistent finish. The wine’s combination of fruit, structure and freshness gives it excellent ageing potential and should allow it to develop gracefully over many years in bottle.

Production
Made from Nebbiolo sourced from Tenuta Paolo Scavino’s historic vineyards across the Barolo area, the wine reflects the diversity of the region’s terroirs. The grapes are destemmed and crushed before natural alcoholic fermentation and skin maceration in temperature-controlled stainless-steel tanks. Malolactic fermentation takes place in 225-litre French oak barrels, followed by maturation in French oak for 10 months and large casks for a further 12 months. The final blend rests for 10 months in stainless steel tanks and then receives an additional 10 months of bottle ageing before release.

Food & Serving
A natural partner for rich and savoury dishes, Barolo Carobric pairs beautifully with braised beef, roasted game, truffle-based dishes, wild mushroom risotto and aged hard cheeses. Serve at approximately 18°C. Decanting for one to two hours is recommended when enjoying the wine now, both to open its aromas and to soften its youthful tannins.

The family estate is now led by Enrico Scavino together with his daughters Enrica and Elisa, combining generations of experience with precise, modern winemaking. The family owns around 29 hectares of vineyards and cultivates additional historic sites in Castiglione Falletto, Barolo, La Morra, Novello, Serralunga d’Alba, Verduno and Roddi. Its wines are valued for their individual terroir expression, complexity and elegance.
