Tenuta Paolo Scavino Barolo Carobric 2017 is a sophisticated expression of Nebbiolo, combining precision, intensity and remarkable length with the distinctive character of several historic Barolo vineyards. Produced by one of the appellation’s most respected family estates, founded in Castiglione Falletto in 1921, it balances traditional identity with carefully applied modern winemaking techniques.
Tasting Notes
In the glass, this Barolo shows a vibrant ruby colour with garnet reflections that hint at its development. The bouquet is beautifully focused, revealing ripe red cherries, rose petals and violets alongside liquorice, spices, subtle balsamic notes and an elegant earthy complexity. On the palate, it is full-bodied yet poised, with concentrated fruit, refined tannins and lively acidity providing structure and freshness. The finish is persistent, clear and harmonious, with the power and depth expected from a fine Barolo. A warm, expressive vintage, 2017 can be enjoyed now with decanting, while further bottle ageing will allow its savoury and tertiary nuances to develop over the next 10–15 years or more.
Production
Made from Nebbiolo grown in the Barolo area of Piedmont, Carobric reflects the diversity of the estate’s historic vineyard holdings. Paolo Scavino works with vineyards in celebrated communes including Castiglione Falletto, Barolo, La Morra, Novello, Serralunga d’Alba, Verduno and Roddi, allowing the wine to combine different expressions of the appellation. The grapes are destemmed and crushed before natural fermentation and skin maceration in temperature-controlled stainless-steel tanks. Maceration generally lasts 10–12 days, with alcoholic fermentation taking approximately 20–30 days. Malolactic fermentation takes place in 225-litre barrels, followed by ageing of the individual components in French oak for 10 months and large casks for a further 12 months. The wine is then blended, matured for 10 months in stainless steel and finished with approximately 10 months of bottle ageing.
Food & Serving
Serve at 16–18°C in a large Burgundy or Barolo glass to give the wine room to open. Decant for around one to two hours when serving young, or pour carefully without decanting if you wish to preserve the delicate aromas of a mature bottle. Its structure and savoury complexity make it an excellent partner for braised beef, wild boar, game birds, truffle dishes, osso buco and richly flavoured mushroom or aged cheese preparations.

Tenuta Paolo Scavino is a historic family-owned winery established in 1921 in Castiglione Falletto, at the heart of the Barolo appellation. Today, Enrico Scavino runs the estate together with his daughters Enrica and Elisa, continuing a philosophy built on independence, precision and respect for individual terroirs. The family owns around 29 hectares of vineyards and also cultivates a further 20 historic Barolo plots across the region. With more than six decades of experience behind him, Enrico Scavino has helped establish the estate as a leading interpreter of cru Nebbiolo, combining meticulous vineyard selection with elegant, age-worthy wines of exceptional clarity and character.
