Tasting Notes
In the glass, this Barolo shows a bright ruby-red colour with the garnet nuances that develop naturally in Nebbiolo. The nose is layered and inviting, combining red berries and cherries with floral notes, subtle spice, earth and delicate hints of oak. On the palate, it is structured yet graceful, with concentrated fruit, refreshing acidity and firm, finely textured tannins. The wine’s complexity reflects the diversity of the vineyards used in the blend, while its balanced finish reveals notes of herbs, spice and dark fruit. With its concentration and tannic backbone, the 2022 Barolo should develop beautifully over the next decade and beyond when properly stored.

Production
The wine represents a blend of Barolo vineyards located across important areas including Castiglione Falletto, Barolo, La Morra, Novello, Serralunga d’Alba, Verduno and Roddi. Each parcel is vinified separately to preserve the character of its individual terroir. After destemming and crushing, the grapes undergo skin maceration for approximately 10–12 days and alcoholic fermentation for around 20–30 days in temperature-controlled stainless-steel tanks. Malolactic fermentation takes place in 225-litre wooden barrels, followed by approximately 10 months in French oak and 12 months in larger casks. The components are then blended and matured for one year in stainless steel, followed by a further 10 months in bottle.

Food & Serving
A classic companion to Piedmontese cuisine, this Barolo is well suited to braised beef, veal, wild boar, game birds and richly flavoured mushroom dishes. It also pairs beautifully with truffle-based pasta, risotto and mature hard cheeses. Serve at around 18°C. Decanting for one to two hours is recommended, particularly in its youth, to soften the tannins and allow the aromatic layers to unfold.

Tenuta Paolo Scavino was founded in 1921 in Castiglione Falletto and remains a family-run estate led by Enrico Scavino together with his daughters, Enrica and Elisa. The family owns 29 hectares of vineyards and cultivates a further 20 historic Barolo sites across several of the region’s most respected communes. Drawing on more than 60 years of experience, the estate combines careful respect for vineyard character with modern winemaking techniques.
