Description
Tenuta Paolo Scavino Barolo 2021 is a refined expression of Nebbiolo shaped by the diversity of the Barolo appellation. Drawing on fruit from carefully selected vineyards across several historic communes, it combines the variety of different soils, elevations and exposures with the hallmark structure, elegance and longevity of great Barolo. The Scavino family has been producing wine in Castiglione Falletto since 1921, giving this bottle a strong connection to the region’s winemaking heritage.
Tasting Notes
In the glass, the wine shows a brilliant ruby-red colour with the garnet nuances that develop naturally in Nebbiolo. Its aromatic profile is layered and inviting, with red cherries, raspberries and rose petals alongside hints of violet, liquorice, spices and subtle earthy notes. With further aeration, the wine reveals greater depth and complexity.
The palate is poised and energetic, combining concentrated red-fruit flavours with firm, refined tannins and lively acidity. Notes of dried flowers, herbs, leather and spice add complexity to the long, savoury finish. The 2021 vintage has the structure and balance to develop beautifully in bottle over the next 10–15 years, while careful decanting will make it approachable sooner.
Production
The wine reflects the varied terroirs of the Barolo region, with fruit sourced from historic vineyards in areas including Castiglione Falletto, Barolo, La Morra, Novello, Serralunga d’Alba, Verduno and Roddi. Individual vineyard parcels are vinified separately to preserve the character imparted by their distinct soils, elevations and exposures. The Nebbiolo grapes are destemmed and crushed before undergoing skin maceration of approximately 10–12 days and alcoholic fermentation for around 20–30 days in temperature-controlled stainless-steel tanks. Malolactic fermentation takes place in 225-litre wooden casks, followed by maturation in French oak for 10 months and large casks for a further 12 months. The selected components are then blended, with the wine spending another year in stainless steel and approximately 10 months in bottle before release.
Food & Serving
A natural partner for Piedmontese cuisine, this Barolo is especially well suited to braised beef, wild boar, veal, roasted game and rich mushroom dishes. It also pairs beautifully with truffle-based pasta, risotto and mature hard cheeses. Serve at 16–18°C in a large Burgundy or Barolo glass. Decant for 1–2 hours before serving, particularly when enjoying the wine in its youth, to soften the tannins and reveal its layered aromas.

Founded in Castiglione Falletto in 1921, Tenuta Paolo Scavino is one of the historic names of the Barolo region. Today, the family estate is led by Enrico Scavino together with his daughters Enrica and Elisa. The Scavinos own approximately 29 hectares of vineyards and also work with a further 20 historic Barolo sites across several of the appellation’s key communes. Their philosophy combines deep knowledge of individual crus with modern winemaking techniques, allowing each parcel to express its own identity. The estate is particularly respected for its elegant, characterful and terroir-driven Nebbiolo wines.
