Tasting Notes
In the glass, Ornellaia 2005 typically shows a deep garnet core with graceful ruby evolution at the rim, hinting at both richness and maturity. The bouquet is layered and refined, with dark cherry, blackberry, cassis, graphite, cedar, tobacco, and Mediterranean herbs, often unfolding slowly with air. On the palate, it is structured yet polished, with ripe black fruit, savory spice, fine-grained tannins, and a long, mineral-driven finish. The 2005 vintage has the concentration and balance to age well, and while it is approachable now, it can continue to develop complexity over time.

Production
Ornellaia is produced in Bolgheri, on Tuscany’s coastal plain, where gravelly, well-drained soils and the moderating influence of the Tyrrhenian Sea help Cabernet and Merlot achieve ripeness without losing freshness. The grapes are typically harvested by hand in small parcels to preserve quality and allow for careful selection. Vinification is carried out separately by vineyard block and variety, followed by aging in French oak barrels to build structure, depth, and aromatic complexity.

Food & Serving
This wine pairs beautifully with roasted beef, grilled lamb, venison, truffle dishes, and rich braised meats, as well as aged hard cheeses. Serve at around 16–18°C, and decant for 1–2 hours if drinking now to allow the wine to open fully and show its layered aromatics.
