Tasting Notes
In the glass, the 2019 La Fabriseria shows a deep, vibrant ruby red with garnet reflections at the rim. The nose opens with restrained, pure aromas of red cherry and wild raspberry, followed by hints of red plum and a delicate floral touch, all supported by nuances of light nougat, butter toffee, gingerbread spice and gentle tobacco.
On the palate, the wine is poised and linear, with a juicy core of red fruit that is more suggested than opulent, giving a sense of refinement rather than richness. A firm but polished tannin structure frames the fruit, while bright, refreshing acidity drives an impressive sense of drinkability and length. Subtle notes of baking spice, cocoa husk and a mineral, almost salty undercurrent add complexity and a silky, mouth-coating texture. The finish is long, clean and savory, inviting another sip rather than weighing down the palate. Enjoyable now with a brief aeration, this 2019 also has the concentration, structure and acidity to evolve gracefully over 8–12 years, developing more tertiary notes of leather, dried herbs and truffle.
Production
La Fabriseria is sourced from high-quality hillside vineyards in the heart of Valpolicella Classica, where poor, stony soils and good drainage naturally limit yields and concentrate flavor in Corvina Veronese, Corvinone, Oseleta and Rondinella. The climate combines warm, sunny days with cooler nights, preserving aromatics and acidity in the grapes. Harvest is typically carried out by hand, allowing careful selection of perfectly ripe bunches. In the cellar, Tedeschi applies a meticulous vinification, often including a period of appassimento (slight drying of a portion of the grapes) to intensify aromas, structure and mouthfeel while avoiding excessive sweetness. Fermentation takes place at controlled temperatures to protect delicate fruit character, followed by a lengthy maturation in oak and bottle to integrate tannins and build the wine’s trademark clarity, density and velvety, mineral-driven finish.
Food & Serving
This Valpolicella Superiore pairs beautifully with roasted lamb, grilled veal chops, braised pork shoulder and game birds such as duck or guinea fowl. It also complements rich pasta dishes with ragù, mushroom risotto, aged hard cheeses and charcuterie with mild spice. Serve at 16–18°C (60–64°F) to highlight its aromatics and structural finesse. Decanting for 30–60 minutes before serving helps the wine open up, softening the tannins and allowing the subtle notes of spice, nougat and tobacco to fully emerge.
