Taupenot Merme, Saint Romain 2024 White

Taupenot-Merme Saint-Romain 2024 is an elegant white Burgundy from one of the Côte de Nuits’ respected family domaines. Combining bright freshness with a rounded texture, it reflects the limestone-rich character of Saint-Romain while offering the finesse and understated complexity associated with Taupenot-Merme. The domaine’s winemaking heritage stretches back to the 18th century, although it was formally established in 1963.

Tasting Notes
The wine is brilliantly clear, with a pale yellow colour and delicate green highlights. Its bouquet brings together white flowers, ripe yellow fruit and subtle notes of toasted bread, while further bottle age may reveal a gentle touch of honey. On the palate, lively acidity gives the wine energy and definition, gradually softening into a more generous, rounded texture with time. The balance between freshness and richness makes it approachable in its youth, while careful cellaring should allow additional depth and honeyed nuances to develop over the coming years.

Production
From the Saint-Romain appellation in Burgundy, the wine benefits from a terroir suited to producing fresh, expressive whites. The grapes are harvested by hand and gently pressed in a pneumatic press at low pressure. Following 24 hours of cold settling, alcoholic fermentation begins in stainless-steel tanks before continuing in oak barrels, 25% of which are new. The wine is then aged for 10 months on its fine lees without racking, helping to build texture while preserving its natural freshness.

Food & Serving
Serve lightly chilled at approximately 10–12°C. This Saint-Romain pairs beautifully with grilled or roasted fish, shellfish, poultry in a light cream sauce, fresh goat’s cheese and dishes featuring seasonal vegetables. Decanting is not essential, particularly when the wine is young, although a short period of aeration in the glass or a gentle decant can help reveal its floral and lightly toasted aromas.

Domaine Taupenot-Merme is based in Morey-Saint-Denis, at the heart of prestigious Burgundy, and is currently run by seventh-generation siblings Virginie and Romain Taupenot. The domaine covers 19 hectares planted with Pinot Noir and Chardonnay across a range of appellations. Its wines are recognised for their finesse and complexity, achieved through careful, terroir-focused vineyard work and minimal intervention in the cellar.
