Taupenot-Merme’s Bourgogne Passetoutgrain 2023 is a fresh, lively red Burgundy with a surprisingly deep colour and an invitingly fruit-forward character. Representing a more approachable style from a domaine better known for its prestigious Côte de Nuits appellations, it combines bright energy with a subtle softness and restrained tannins. The Passetoutgrain tradition is distinctive within Burgundy, traditionally bringing together Pinot Noir and Gamay for an easy-drinking yet expressive wine.

Tasting Notes
The wine shows a relatively deep ruby colour in the glass. Its nose is fresh and generous, led by vibrant red-fruit aromas with a pleasingly youthful, vinous character. On the palate, it is lively and energetic, with supple fruit, refreshing acidity and a discreet softness that rounds out the finish. Tannins are relatively low, making the wine immediately accessible and enjoyable in its youth. It is best appreciated over the next few years, while its freshness and fruit remain at their most vivid.

Production
The grapes are sourced from Burgundy and harvested by hand before being placed in temperature-controlled stainless-steel tanks. After a 14- to 18-day maceration, fermentation is carefully managed with daily manual pigeage to extract colour and flavour while preserving freshness. The wine then matures for approximately 10 months on its fine lees in stainless steel, allowing malolactic fermentation to soften the acidity without sacrificing its lively character. It is lightly filtered before bottling.

Food & Serving
Serve lightly chilled at around 14–16°C to highlight the wine’s freshness and supple fruit. It is a versatile partner for charcuterie, pâté, roast chicken, grilled sausages, pork dishes, mushroom preparations and simple Burgundy-inspired cuisine. Decanting is not essential, although a brief 15–20 minutes of aeration can help open the aromas, particularly when the bottle is young.

Domaine Taupenot-Merme is based in Morey-Saint-Denis, at the heart of Burgundy’s prestigious Côte de Nuits. Although the domaine was officially established in 1963 through the marriage of Jean Taupenot and Denise Merme, the family’s involvement in viticulture reaches back to the 18th century. Today, seventh-generation Virginie and Romain Taupenot-Merme oversee approximately 19 hectares of vineyards planted to Pinot Noir and Chardonnay. Their wines are recognised for their finesse and complexity, achieved through careful attention to terroir and a restrained, minimal-intervention approach in the cellar.
