Tasting Notes
In the glass, it shows a brilliant pale gold color with a fine, persistent mousse. The bouquet is refined and layered, with notes of white flowers, lemon zest, green apple, brioche, toasted almond, and a subtle mineral edge that reflects its chalky origins.
The palate is taut and beautifully structured, balancing citrus-driven freshness with creamy texture and impressive length. Expect flavors of pear, grapefruit, hazelnut, and delicate pastry, all framed by a precise, chalky finish. While already compelling, it has the concentration and structure to age gracefully for many years, developing even more complexity with time.
Production
Comtes de Champagne Blanc de Blancs is produced only in exceptional years and is crafted entirely from Chardonnay grown in selected Grand Cru sites, primarily from the Côte des Blancs, where chalk-rich soils provide the wine’s signature tension and elegance. The grapes are carefully hand-harvested, and only the best juices are used, with vinification designed to preserve purity, freshness, and aromatic precision before extended aging on lees in the cellar.
Food & Serving
This Champagne is an excellent match for oysters, caviar, scallops, lobster, sashimi, and other refined seafood dishes, as well as lightly creamy poultry preparations and aged Parmesan. Serve well chilled at around 8–10°C. Decanting is not recommended for Champagne, but allowing it a few minutes in the glass can help the aromas open beautifully.
