Tasting Notes
In the glass, the 2023 Bourgogne Rouge shows a translucent ruby to garnet hue, with a lively brightness at the rim that hints at its youthful energy. The nose is expressive and precise: wild strawberries, crushed raspberries and red cherries are layered with floral notes of rose petal and violet, alongside subtle hints of dried herbs, spice and a touch of earth. On the palate, this wine is medium-bodied yet wonderfully light on its feet, with silky tannins and a finely etched, mineral backbone. Production
This Bourgogne Rouge is sourced from carefully selected Pinot Noir plots in Burgundy, reflecting the cooler, limestone-rich terroirs that Sylvain Pataille is renowned for. The soils are typically a mix of clay and limestone, lending both perfume and structure, while the relatively northerly exposures preserve freshness and acidity. Pataille farms organically (and in many parcels biodynamically), favoring low yields, meticulous canopy management and manual harvesting to ensure only perfectly ripe, healthy grapes are brought to the cellar. In the winery, he follows a minimally interventionist approach, often incorporating a proportion of whole clusters to enhance aromatics, texture and spice. Fermentation takes place with indigenous yeasts, followed by aging in mostly older oak barrels to allow the wine to mature and integrate without overwhelming it with wood. The result is a transparent expression of Pinot Noir and place, marked by finesse rather than power.

Sylvain Pataille Bourgogne Rouge 2023 is a versatile food wine that shines with dishes that mirror its finesse and delicacy. Classic pairings include roast chicken with herbs, duck breast, pork tenderloin, charcuterie, and lighter lamb preparations, as well as mushroom-based dishes, root vegetable gratins and simple pastas with tomato or mushroom sauces. It also works beautifully with soft to semi-hard cheeses such as Brie, Camembert, Tomme or mild Comté. Serve at 14–16°C (57–61°F) for optimal freshness and aromatic lift. A short 20–30 minute decant can help the wine open up and soften its youthful edges, but it will also show well simply poured and allowed to evolve in the glass over the course of a meal.
