Sourced from Grand Cru vineyards in Le Mesnil-sur-Oger, this cuvée showcases Chardonnay in its purest, most mineral-driven form, with a taut, chalky elegance that serious Champagne lovers seek out. The ‘Dorien N°80’ bottling reflects Regnault’s jazz-inspired, parcel-focused philosophy: each wine is like a solo performance, expressing the unique rhythm and character of a single terroir.
Tasting Notes
In the glass, Dorien N°80 shows a pale, luminous straw color with fine, persistent bubbles and a silvery, almost crystalline sheen that hints at its chalk-heavy origins. The nose is refined and precise, weaving together notes of lemon zest, white flowers, chalk dust, green apple, and a touch of brioche and roasted hazelnut from extended lees aging. Subtle hints of grapefruit pith, wet stone, and a whisper of salinity add complexity and lift.
On the palate, this Extra Brut is razor-sharp yet beautifully balanced, with a linear, mouthwatering acidity wrapped around a core of citrus, crunchy orchard fruit, and delicate almond. The texture is both creamy and tensile, carried by very fine mousse and a long, saline finish that leaves impressions of chalk, lemon peel, and subtle pastry. The low dosage lets the Grand Cru character shine through in all its precision and tension. Dorien N°80 is sourced from Grand Cru parcels in Le Mesnil-sur-Oger, one of Champagne’s most prized villages, known for its pure chalk subsoils and cool, sun-exposed slopes that give Chardonnay its hallmark finesse and electric minerality. Stéphane Regnault works as a true grower-producer, farming his vines with meticulous care, favoring low yields and manual harvesting at optimal ripeness to preserve tension and aromatic purity. In the cellar, he vinifies each parcel separately, often using a mix of stainless steel and neutral oak to balance clarity and texture, followed by extended aging on the lees to build complexity and finesse. The wine is bottled with a very low dosage (Extra Brut), allowing the terroir’s chalky precision and the natural balance of the fruit to take center stage.

This Champagne is a natural partner for refined, mineral-driven dishes: think oysters on the half shell, scallop crudo, sashimi, caviar, or simply prepared white fish with citrus and herbs. It also pairs beautifully with goat’s cheese, young Comté, tempura vegetables, and light seafood pastas where freshness is key. Serve well-chilled at around 8–10°C (46–50°F) to highlight its precision and minerality.
