Stephane Regnault’s Champagne Grand Cru Blanc de Blancs Extra Brut Chromatique is a precise and terroir-driven expression of Chardonnay from the heart of the Côte des Blancs. Blending fruit from different parcels in Le Mesnil-sur-Oger and Oger, it balances the tension of chalky purity with a slightly rounder, more generous dimension. As a Grand Cru Blanc de Blancs, it reflects both the historic prestige of the region and the singular character of these celebrated villages.
Tasting Notes
In the glass, it should show a pale, luminous gold with a fine, persistent mousse. The nose is likely to be elegant and mineral-led, with citrus zest, white flowers, green apple, and chalky nuances, alongside subtler notes of stone fruit and brioche from bottle age.
On the palate, expect a dry, focused profile with crisp acidity, saline minerality, and a clean, linear finish. The Extra Brut style keeps the wine taut and refined, while the mix of parcels adds complexity and depth. This Champagne should drink beautifully now and has the structure to develop gracefully over several years, gaining more honeyed and nutty nuances with time.
Production
Chromatique is a non-vintage cuvée made from several estate parcels, combining vines from the intensely chalky slopes of Mesnil-sur-Oger with vines from Oger, where the soils are a little richer. This terroir contrast gives the wine both precision and breadth, with Chardonnay expressing its classic Côte des Blancs clarity. As with many grower Champagnes, production is likely focused on careful vineyard work and parcel selection to preserve freshness, site character, and balance in the final blend.
Food & Serving
This Champagne pairs beautifully with oysters, scallops, sushi, sashimi, delicate white fish, and refined poultry dishes. It also works well with hard cheeses such as aged Comté or Parmesan. Serve well chilled, ideally around 8–10°C, and decanting is not recommended; instead, open shortly before serving to preserve its finesse and energetic mousse.
