Steintal Spätburgunder Hundsrück Großes Gewächs 2017 is a finely etched German Pinot Noir from the steep red sandstone slopes of Franken. Crafted as a Großes Gewächs, it represents the pinnacle of dry Spätburgunder from one of the region’s most coveted single vineyards, Hundsrück. This 2017 vintage combines Burgundian finesse with unmistakably Franconian minerality, offering a wine of depth, tension and poise.

Tasting Notes
In the glass, the 2017 Hundsrück Spätburgunder shows a luminous, medium ruby color with a delicate translucence typical of top-class Pinot Noir. The nose opens slowly but precisely: wild red cherries, cranberries and raspberry compote are layered with rose petals, dried violets and a fine, cool stone character. Subtle notes of sweet spice, black tea, forest floor and a hint of smoked herbs reveal themselves with air, underpinned by well-integrated oak. On the palate, this is taut and elegant rather than opulent, with a filigreed structure and a striking saline minerality. Juicy red berry and cherry fruit are framed by fine-grained, chalky tannins and vibrant, refreshing acidity. Hints of blood orange, pomegranate, crushed rock and subtle cedar carry through to a long, precise finish. Still youthful, the wine has excellent aging potential; it should evolve beautifully over the next 8–15 years, gaining further complexity, silkiness and aromatic depth.

Production
The Hundsrück vineyard in Franken is known for its steep, well-drained slopes and red sandstone soils, which confer both finesse and a distinctive mineral backbone to Spätburgunder. At Weingut Steintal, the fruit for this Großes Gewächs is sourced from low-yielding vines, carefully hand-harvested at optimal ripeness to ensure perfect berry selection. In the cellar, the grapes are typically destemmed (often with a portion of whole clusters depending on the vintage), followed by a gentle, temperature-controlled fermentation with indigenous yeasts to preserve the vineyard’s character. Aging takes place in finely grained oak barrels, predominantly used and only partially new, allowing the wine to gain texture and complexity without overwhelming the delicate Pinot fruit. The result is a precise, terroir-driven expression of Hundsrück that captures both power and refinement.

Food & Serving
This Spätburgunder pairs beautifully with refined, savory dishes that mirror its elegance and structure: think roast duck with thyme and cherries, veal tenderloin, guinea fowl, mushroom risotto, truffle pasta or grilled salmon and tuna. It also shines alongside aged semi-hard cheeses and charcuterie with subtle smokiness. Serve at 14–16°C to highlight its aromatic detail and freshness. Decanting for 30–60 minutes is recommended in its youth to allow the bouquet to fully open and the tannins to soften, while older bottles can be served with a gentle splash into a carafe shortly before pouring.
