Tasting Notes
In the glass, the 2017 Bischofsberg GG shows a luminous, medium ruby colour with garnet nuances developing toward the rim, hinting at its evolution while retaining vibrancy. The nose is detailed and refined: wild cherries, redcurrant and ripe raspberry are layered with rose petals, dried herbs, and a graphite-like, crushed stone minerality. Subtle savoury tones of forest floor, black tea, and a touch of smoky, well-integrated oak add depth without overpowering the fruit.
On the palate, this is poised and tightly focused, with a fine, linear structure. Juicy red berry and cherry fruit glide over a core of cool, stony minerality, supported by silky yet precise tannins. Notes of blood orange zest, spice and a faint hint of cocoa and cedar from élevage in fine-grained oak bring complexity to the long, lingering finish. Production
The Bischofsberg vineyard in Churfranken (Franken) is a steep, terraced hillside of weathered red sandstone, facing predominantly south to southwest, capturing abundant light while benefiting from cool river influences and nighttime temperature drops. This combination produces Spätburgunder of remarkable aromatic lift, tension and finesse. Yields for the Großes Gewächs are kept very low, with meticulous hand work in the vines—green harvesting, careful canopy management and strictly manual selection at harvest ensure only perfectly ripe, healthy grapes are used. In the cellar, Benedikt Baltes follows a minimally interventionist philosophy: spontaneous fermentation with native yeasts, a significant proportion of whole berries or partial whole clusters depending on vintage character, and gentle extraction through pump-overs and pigeage. The wine is then matured for an extended period in traditional German Stück and Burgundy barriques, predominantly seasoned oak, to preserve purity of fruit and terroir expression. Bottling is generally done with light filtration, if any, to maintain texture and aromatic complexity.

This refined Spätburgunder is an excellent partner for elegant, nuanced dishes rather than overpowering flavours.
