Grapes are harvested by hand at optimal ripeness to preserve purity of fruit and tannin finesse, then carefully sorted at the winery for quality. Fermentation typically takes place in stainless steel to maintain freshness and precision, followed by aging in French oak barrels, a portion of which are new, to impart subtle spice, cedar, and toast without overwhelming the varietal character.
