Spottswoode selects cool-climate vineyard parcels that are especially well suited to Sauvignon Blanc, and the different sites are kept separate during fermentation to preserve their individual character. The winery often works with as many as 200 small batches, allowing the team to evaluate each lot on its own before assembling the final blend. This meticulous approach, combined with the use of the Musque clone, helps create a wine with precision, complexity, and a distinctive sense of place.
