Sottimano Bric del Salto Dolcetto d'Alba 2020 is a beautifully authentic expression of this traditional Piedmontese grape, crafted with the same care the estate devotes to its Barbaresco crus. Sourced from top Barbaresco vineyards better known for Nebbiolo, this Dolcetto offers a deep, characterful red that is both approachable and seriously structured. Unfined, unfiltered and organically grown, it captures the pure, unadorned soul of Dolcetto from Alba.

Tasting Notes
In the glass, Bric del Salto shows a vibrant, deep ruby colour with purple highlights, signaling its youthful energy. The nose is generous and expressive, with ripe red fruit at the forefront: juicy cherries and wild raspberries, layered with hints of violet, juniper, and a subtle yogurt-like creaminess. Delicate earthy and slightly iodine notes add complexity and a distinctly Piedmontese feel. On the palate, the wine is straight and focused, with a savoury, almost herbal juiciness that keeps it mouthwatering and refreshing. The tannins are fine yet gently gripping, giving structure without heaviness, while the moderate acidity supports the fruit and enhances drinkability. Flavours of red cherry, raspberry and a touch of plum are joined by a faint bitter-almond twist on the finish, typical of Dolcetto. Enjoyable now for its vibrant fruit, it has the concentration and balance to develop additional nuance over the next 4–6 years.

Production
The grapes for Bric del Salto come from organically farmed vines in the renowned Barbaresco crus of Cottà, Basarin and San Cristoforo, on parcels slightly less ideal for Nebbiolo but perfectly suited to the earlier-ripening Dolcetto. Here, calcareous marl and clay soils, combined with well-exposed slopes, give naturally low yields and excellent ripeness without excess weight. All grapes are harvested by hand to ensure careful selection in the vineyard. Fermentation takes place spontaneously with indigenous yeasts on the skins, following traditional methods that preserve terroir character. The wine is then aged for around nine months in stainless steel tanks, with no fining or filtration, to preserve its purity, freshness, and textural integrity.

Food & Serving
This Dolcetto is a versatile food wine that shines alongside classic Piedmontese fare and everyday Italian cooking. Try it with antipasti of cured meats and hard cheeses, tajarin or other egg pasta with meat ragù, pizza with cured meats and mushrooms, grilled sausages, roast chicken, or hearty vegetable dishes like stuffed peppers or oven-roasted aubergine. Serve at 16–18°C; a light chill on warmer days can enhance its freshness. Decanting for 20–30 minutes can help the aromatics open up, though it is also very enjoyable poured straight from the bottle.
