Crafted from younger vines rooted in rare red slate (locally called phyllit), it captures both the finesse of classic Pinot Noir and the distinctive mineral imprint of its terroir. This cuvée offers a remarkably harmonious, elegant expression that showcases why Solveigs is widely regarded as one of Germany’s leading Pinot specialists.

Tasting Notes
In the glass, Phyllit 2022 shows a bright, translucent ruby hue with a youthful clarity that hints at its freshness and tension. The nose opens with pure, vibrant red fruits – wild strawberries and raspberries – layered with subtle notes of red cherry, rose petal and a fine, savoury spice from its time in barrique. Gentle hints of dried herbs, forest floor and a touch of smoky minerality underline the influence of the red slate soils. On the palate, the wine is silky and finely etched, with the classic light-to-medium body that Pinot lovers seek. Juicy red berry flavours are supported by a lively yet well-integrated acidity, giving the wine lift and drinkability. Fine-grained tannins and discreet oak bring structure and a delicately spicy, almost saline finish. The overall impression is one of balance and harmony rather than power. Enjoyable now for its charm and purity, it also has the structure and natural acidity to evolve gracefully over the next 8–10 years, gaining more savoury and tertiary complexity with time in bottle.

Production
The Phyllit Pinot Noir comes from steep, historic Pinot sites in the former Assmannshäuser Steil, where vines dig deep into distinctive red phyllit-slate soils. This unique, iron-rich rock lends the wine its mineral backbone and name. Solveigs works exclusively with Pinot Noir from their own steep vineyards, farmed with a strong focus on "pure nature" – relying on biology and physics rather than synthetic inputs. Grapes are hand-harvested from these demanding slopes, destemmed, and fermented as whole berries in open vats with only native yeasts. Maceration on skins typically lasts around two weeks, followed by a gentle pressing and separate élevage according to vineyard block. The wine then matures slowly in small oak barrels (barriques) for about 24 months, undergoing natural sedimentation rather than fining or filtration. After roughly 18 months of additional bottle aging, it is released unfiltered and sealed under natural cork, capturing the wine in its most authentic, unadorned state.

Food & Serving
Phyllit 2022 is an exceptionally versatile gastronomic Pinot Noir. Its refined structure and bright red fruit make it a beautiful match for roasted or pan-seared fish (especially salmon or trout), roast chicken, pork tenderloin, braised pork cheeks, or delicate veal dishes. It also works well with mushroom-based plates, mild game birds, and refined vegetarian cuisine featuring beetroot, root vegetables or lentils. Serve at 14–16 °C; a brief chill helps accentuate its freshness. Young bottles benefit from 30–45 minutes in a decanter to let the aromatics unfurl, while more mature bottles can simply be opened ahead and enjoyed as they evolve in the glass.

Producer
Solveigs is led by Jens Heinemeyer, who has transformed the estate into one of Germany’s reference addresses for Pinot Noir. The winery is devoted exclusively to Pinot and to historically important Pinot sites on the steep slopes once known as Assmannshäuser Steil – long celebrated for producing some of Germany’s most characterful Spätburgunder. Vineyard work is handled by the family and a small, well-trained team who have developed a deep, practical understanding of nature by working closely within it. Since 1995, vinification has followed a philosophy sometimes described as “lazy winemaking” or “controlled inactivity”: minimal intervention, native yeasts, open-vat fermentations, long, unhurried élevage in oak, and bottling without fining or filtration. No enzymes, selected yeasts, tartaric acid or other flavour-shaping additives are used. This steadfast commitment to purity, terroir expression and patient maturation has made Solveigs a benchmark for authentic, natural-leaning Pinot Noir in the Rheingau and beyond.
