Tasting Notes
Pale straw in the glass with a fine, persistent mousse, this Brut shows a delicate and polished style. The nose opens with subtle notes of yeast, fresh bread crust, and a hint of orchard fruit, gradually moving toward touches of honey and spice. On the palate it is dry, crisp, and well-balanced, with lively acidity that supports its mineral freshness and adds length. The extended lees aging gives the wine extra texture and complexity, while the finish remains graceful and nuanced. It is drinking beautifully now and should hold its character well over the next few years.

Production
Made in Piemonte from Cortese grapes selected for their suitability to Gavi DOCG, this sparkling wine is produced by the traditional method, with secondary fermentation in bottle. A slow maturation on the lees for more than 24 months contributes depth, fine bubbles, and the wine’s characteristic notes of yeast, pastry, honey, and gentle spice.

Food & Serving
Ideal with seafood, shellfish, sushi, light risottos, and delicate white meat dishes, as well as refined antipasti and soft cheeses. Serve well chilled at 6–8°C. Decanting is not recommended; instead, open shortly before serving to preserve the wine’s freshness and sparkle.
