Tasting Notes
Deep, richly colored, and immediately expressive, the wine opens with aromas of black raspberry, cassis, dried flowers, white pepper, and licorice. On the palate it is full-bodied and layered, with seamless texture, generous fruit, and fine-grained tannins that give structure without sacrificing its seductive, polished feel. While already compelling in its youth, Dark Blossom has the balance and tannic backbone to reward short-term cellaring. It is expected to evolve beautifully over the next several years, gaining additional nuance and complexity through at least 2029.

Production
Dark Blossom 2011 is a Rhône-inspired blend from California, led by Grenache and supported by Syrah, Mourvèdre, and a small amount of Roussanne, with 11% whole clusters used in fermentation. Sine Qua Non’s vineyards are concentrated in Ventura County and Santa Barbara, where warm, sun-drenched conditions help achieve full ripeness while preserving aromatic lift and freshness. The winery follows a hands-on, instinct-driven approach to viticulture and production, aiming to let the fruit and site speak with minimal dogma.

Food & Serving
This wine pairs beautifully with rich, flavor-packed dishes such as roasted lamb, grilled duck, braised short ribs, or game with Mediterranean herbs. It also works well with mushroom-based dishes and aged hard cheeses. Serve at around 16–18°C, and decant for about 1–2 hours if drinking now to allow the perfume and texture to fully open.
