Tasting Notes
In the glass, the 2017 Hillside Select shows a deep, opaque garnet-purple hue that clings to the rim. The nose is intensely perfumed and layered, opening with blueberry pie, crème de cassis, black cherry compote, and chocolate-covered cherries, then unfolding into notes of cedar chest, tobacco leaf, burnt earth, violets, exotic spices, clove oil, lavender, and a cool hint of menthol.
On the palate, this is full-bodied and opulent yet remarkably precise. Dense black and blue fruits are wrapped in velvety, ripe tannins, delivering a mouthfeel that is both richly layered and seamlessly textured. Production
Hillside Select is crafted exclusively from Shafer’s estate Cabernet Sauvignon vines planted on the steep, rock-strewn slopes of the Stags Leap District in Napa Valley, where poor, well-drained soils and warm days balanced by cool nights produce intensely flavored, small-berried fruit. The grapes are harvested by hand at optimal ripeness, with meticulous sorting to ensure only pristine clusters make it to the fermenters. Fermentation takes place in temperature-controlled stainless steel tanks to preserve purity and aromatic lift, followed by extended maturation—traditionally around 30–32 months—in 100% new French oak barrels, which contributes fine-grained structure, polish, and subtle spice without overwhelming the character of the vineyard.

This is a natural partner for richly flavored, protein‑driven dishes: think dry‑aged ribeye, grilled lamb chops with rosemary, beef short ribs, venison, or a truffle‑accented beef Wellington. It also pairs beautifully with mature hard cheeses such as aged Comté, Parmigiano‑Reggiano, or well-aged cheddar. Serve at 16–18°C (60–64°F) for best balance and aromatic expression. If drinking young (within the first 10 years of the vintage), decant for 1.5–3 hours to allow the wine to unwind; older bottles (15+ years) typically benefit from a gentler, shorter decant to remove sediment and let the more delicate tertiary notes emerge.
