Tasting Notes
Deep, opaque ruby in the glass, Hillside Select 2012 is intensely aromatic and wonderfully layered. The nose opens with dark plums, blackcurrant tart, cassis, and anise, followed by more lifted nuances of nutmeg and rose petals. On the palate it is powerful, plush, and deeply flavored, repeating the dark plum and blueberry tones from the bouquet before unfolding into pomegranate, licorice, crushed stone, tobacco, sage, and a subtle smoky edge. The finish is exceptionally long and persistent. While already impressive, this magnum has the structure and depth to age beautifully for at least two decades, if not longer.

Production
The grapes come from 14 small hillside parcels on Shafer’s estate in Napa Valley, where the steep slopes and varied exposures help produce concentrated, structured Cabernet Sauvignon fruit. The 2012 wine was crafted by winemaker Elias Fernandez and aged for 32 months in 100% new French oak, a regimen that adds polish, spice, and complexity to the wine’s naturally powerful character.

Food & Serving
This is a wine for rich, deeply flavored dishes such as prime rib, dry-aged steak, slow-braised short ribs, or lamb with rosemary and garlic. It also works beautifully with aged hard cheeses. Serve at around 16–18°C, and decant well in advance if opening young, especially given the magnum format and the wine’s impressive concentration.
