Tasting Notes
In the glass, it shows a deep, nearly opaque ruby-purple color that hints at its power and richness. The nose is intensely layered, with dark plum, blackcurrant tart, cassis, anise, nutmeg, and a subtle floral lift of rose petals. On the palate, it is massive yet composed, unfolding with dark plum, blueberry, pomegranate, licorice, crushed stone, tobacco, sage, and smoky undertones. The finish is exceptionally long and persistent, with the structure and depth to evolve beautifully over the next 20 years or more.

Production
Hillside Select is made from 100% Cabernet Sauvignon grown on 14 small hillside vineyard blocks at Shafer Vineyards in Napa Valley, where the steep slopes naturally limit yields and intensify flavor. The wine was crafted by winemaker Elias Fernandez and aged for 32 months in 100% new French oak, which adds polish, spice, and additional complexity to its dense fruit core.

Food & Serving
This is a powerful wine best enjoyed with equally bold dishes such as prime rib, dry-aged steak, lamb chops, or venison. Serve at around 16–18°C and consider decanting for at least 2–3 hours, especially if opened young, to allow the wine’s aromatics and structure to fully раскрыться.
