These are extremely old, often low‑trained bush vines, farmed with a focus on biodiversity and minimal chemical intervention to respect the local ecosystem. Harvest is carried out by hand to ensure careful selection of bunches, typically in the cool of early morning to preserve freshness. In the cellar, Maher Harb works with a low‑intervention philosophy: native yeasts for spontaneous fermentation, gentle pressing, and maturation in neutral vessels to avoid masking the grape’s character. The wine is typically bottled with minimal fining and filtration, and only modest additions of sulfur if needed, resulting in a transparent expression of Merweh and its mountainous Mediterranean terroir.
