Tasting Notes
In the glass, the 2023 Fourchaume Premier Cru shows a pale lemon color with green reflections, hinting at its youth and vibrancy. Séguinot-Bordet farms these slopes with close attention to vine health and ripeness, harvesting at optimal maturity to preserve both fruit purity and natural acidity. In the cellar, the Chardonnay is vinified with a gentle touch—typically using temperature-controlled fermentation to protect aromatic freshness, and a restrained use of oak, if any, to let the terroir speak clearly. The result is a precise, terroir-driven Chablis that reflects both its historic origin and careful, modern craftsmanship.

This Fourchaume Premier Cru is a superb partner to seafood and refined, delicately flavored dishes. Think oysters, scallops, langoustines, sushi and sashimi, or simply grilled white fish with lemon and herbs.
