The nose is layered and evolving rather than overtly primary: yellow apple, ripe pear and quince are woven with notes of fennel seed, white pepper and dried herbs. With air, you may find hints of tobacco leaf, chamomile, honeycomb, and a gentle nuttiness from extended élevage in large casks. It’s savory and spice-driven, with the trademark Grüner Veltliner “pepper” coming through as a fine thread rather than a loud note.
On the palate, this is structured, dry and textural—medium to full-bodied with a broad, almost waxy mid-palate. Flavors of stone fruit and baked apple are balanced by crushed rock minerality, subtle leesy creaminess, and a refined bitterness reminiscent of grapefruit pith and noble herbs. Schloss Gobelsburg’s “Tradition” wines are sourced from old-vine Grüner Veltliner parcels rooted in primary rock and loess soils in the hills surrounding the estate, a terroir that brings both mineral precision and a generous, ripe profile. Grapes are typically harvested by hand, with careful selection in the vineyard to ensure only healthy, fully ripe bunches make it into the cellar. In keeping with the historical inspiration, the must is gently pressed and allowed to ferment spontaneously with indigenous yeasts in large, neutral oak casks, rather than stainless steel. The wine then rests on its fine lees for an extended period, with minimal intervention and subdued racking, allowing texture, depth and aromatic complexity to build gradually before being bottled—here in an impressive, slow-maturing 12-liter format.

This traditional, structured Grüner Veltliner is exceptionally versatile at the table and particularly well-suited to rich, savory cuisine. It pairs beautifully with roasted poultry (think herb-roasted chicken or guinea fowl), veal schnitzel, pork loin, and dishes featuring mushrooms, root vegetables or winter squash. Classic Central European fare, from crisp schnitzel and potato salad to roasted pork with crackling, will find a natural partner here, as will more refined plates like poached turbot, scallops, or lobster with beurre blanc. For cheese, try aged mountain cheeses, Comté, or semi-hard Alpine styles. Serve at 10–12°C (50–54°F) to allow both freshness and complexity to show; in its youth, a short decant of 30–60 minutes can help the wine open, while older bottles should be handled gently and decanted only to remove sediment.
