Tasting Notes
In the glass, the wine shows deep, насыщенный dark fruit character with an opaque, almost inky core. The nose is layered and expressive, offering black cherry, blackberry, blueberry, licorice, crushed rock, Mediterranean herbs, and exotic spice.
On the palate, it is full-bodied and concentrated, yet balanced by fresh acidity, silky tannins, and a pronounced stony minerality. The finish is long and complex, with lingering notes of ripe dark fruit, spice, and earthy mineral nuance. With its structure and concentration, the 2007 vintage has strong aging potential and should continue to evolve gracefully over time.
Production
Broken Stones comes from Paso Robles’ chalky, rocky terroir, whose difficult growing conditions naturally limit yields and produce small, intensely flavored berries. Saxum farms and vinifies with minimal intervention, and the wines are bottled without fining or filtration to preserve purity, texture, and site expression.
Food & Serving
This is a wine that pairs beautifully with slow-roasted lamb, grilled beef, braised short ribs, or game dishes with herbs and spice. It also works well with rich mushroom preparations and aged hard cheeses. Serve at around 16–18°C, and decant for at least 1–2 hours if possible to allow the aromatics and structure to fully open.
