Tasting Notes
This wine shows a marked, very distinctive style, with a flinty, reductive opening that can evoke gunpowder and wet stone right after uncorking. With air, the nose and palate typically move toward classic Riesling tension and minerality, offering a focused, dry impression and a firm, textured structure. The overall profile suggests a wine built more for complexity than immediate charm, with crisp acidity and a serious, savory edge. It has good aging potential, and a little patience in bottle—or in the glass—should allow its aromas to open and integrate beautifully.

Production
The parcel sits directly below the Basilica of St. Ägidius in Mittelheim, in the Rheingau’s famous St. Nikolaus vineyard, on terroir known for producing expressive, mineral-driven wines. The grapes were harvested by hand, gently pressed in a restored basket press, then matured in traditional wooden casks with minimal sulfur added. Bottling was also done by hand without electric pumps, underscoring the winery’s artisanal, low-intervention philosophy.

Food & Serving
Best served chilled at around 8–10°C, this Riesling pairs well with dishes that can match its mineral tension and acidity, such as oysters, grilled fish, sushi, asparagus, or lightly seasoned poultry. Decanting is not essential, but allowing it to breathe for a short time after opening can help soften the initial reductive notes and reveal more of its complexity.
